Ingredients

Berry Layer

  • ½ cup frozen mixed berries
  • ½ cup plant-based milk of choice
  • ¼ cup chia seeds
  • 1 tsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp Elderberry C Liquid

Vanilla layer

  • ½ cup plant-based milk of choice
  • 2 tbsp chia seeds
  • 1 tsp maple syrup
  • ½ tsp vanilla extract

Garnish

  • Berries of choice
  • Coconut flakes
  • 1 Elderberry C chewable, crushed (optional)

Directions

  1. In a blender, combine frozen berries, plant-based milk, vanilla, and maple syrup. Blend until smooth, and pour into a medium-sized container. With a spoon, stir in chia seeds and Elderberry C liquid. This is your berry layer! Set aside.
  2. In a separate container, combine all ingredients to make the vanilla layer. Using a spoon, mix well to combine.
  3. Cover both containers and chill for 1½ hours or overnight in the fridge.
  4. Once the puddings have set, alternate layering the vanilla and berry chia pudding into your two serving cups. Add berries in between layers.
  5. Top with your favourite garnishes, and enjoy!
