Busy week ahead? Fuel your day with this easy, ready-to-go, fibre-rich breakfast. This creamy Chocolate Coconut Chia Pudding is perfect for a nourishing post-workout breakfast or snack. Prepare the night before, and enjoy it all week long!

Ingredients

Chia Pudding:

  • 1 can coconut milk
  • 1 cup water
  • ¼ cup chia seeds
  • 3 tbsp maple syrup
  • 2 tbsp shredded coconut
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 scoop chocolate protein powder (optional)
  • 1 scoop L-Glycine

Optional toppings:

  • Fresh berries
  • Almond butter
  • Pumpkin seeds
  • Hemp hearts

Directions

  1. Add all ingredients to a bowl, and mix well to combine.
  2. Distribute the mixture amongst four jars. Cover and refrigerate for at least two hours or overnight to thicken.
  3. Once set, top with your favourite toppings and enjoy!

Storage Instructions: Store covered in the refrigerator for up to seven days.
