Cream of Green Detox Soup

This Cream of Green Detox Soup is a great way to diversify your diet by sneaking in extra vegetables and functional nutrients that support detoxification.

Ingredients

  • 2 large heads of broccoli, chopped
  • 2 large carrots, grated
  • 1 large white onion, chopped
  • 1 can lima beans, drained and rinsed
  • 1litre vegetable broth
  • 4 tbsp full-fat canned coconut cream
  • 2 tbsp extra virgin olive oil
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • 2 scoops Green Up! with GRAMS

Optional Toppings:

  • Grated Cheddar cheese
  • Croutons
  • Parsley

Directions

  1. In a large stock pot, heat olive oil over medium heat and add garlic. Cook until fragrant then add in the onions.
  2. Once the garlic and onions are softened, add carrots, broccoli, salt and pepper to the pot.
  3. After 5 minutes, add in the broth, reduce the heat to medium-low, and cover with a lid. Allow the soup to simmer for 20 to 30 minutes or until all the vegetables are tender.
  4. Once cooked remove from heat and set aside to cool.
  5. Using a high-speed blender, process the mixture until completely smooth.
  6. Transfer the soup back into the stock pot and add in the beans, coconut cream, and Green Up! with GRAMS.
  7. Serve warm with desired toppings.
